Supple, refined Mornington Pinot from Dr Steve’s Balnarring vineyard. A site that’s excitingly transitioning to organics. We fully destemmed and wild fermented beautiful fruit, with daily hand plunging for two weeks, before pressing it to old puncheons and barriques for ageing.
Look out for forest berries, subtle spice and pomegranate, a wash of saline acids and silky textures throughout, and some chalky grip to close.
